Capra Bianca Huevos Rancheros Tacos
2 cups shredded Capra Bianca Aged Goat Cheddar
1 tablespoon crumbled Bella Capra Chèvre
4 scrambled eggs
1 cup guacamole or plain avocado
2 strips bacon, crumbled
1/2 cup fresh salsa
1/2 cup shredded purple cabbage
1/2 tablespoon sliced green onion
In a medium sauce pan place 1 cup shredded Capra Bianca Goat Cheddar in a circle pattern and cook on medium high heat until lightly browned, then flip to cook the other side.
While still hot, carefully place the crispy cheese shell over a folded paper plate so it hangs to form a taco shell.
Let cool then fill with scrambled egg, guacamole or avocado, purple cabbage, salsa, green onion, bacon, and finish with fresh Chèvre crumbles.
